Blueberry and nut butter chia pudding

A few minutes of preparation, several ingredients and you have a nutritious breakfast or dessert. Chia pudding is a great way to start the day because of its benefits – there is plenty of fiber, plant-based protein, and Omega 3 fatty acids.

However, I made this recipe even more nutritious because I added a couple of teaspoons of lyophilized blueberry powder, which is rich in antioxidants and vitamins. I use powder because fresh berries are quite expensive and lyophilized products keep their nutritional value perfectly – just 10 grams of powder replaces 100 grams of berries.

3 tablespoons chia seeds
120 ml  plant-based milk (I used almond milk)
2 tablespoons maple syrup (honey or another sweetener)
1 teaspoon nut butter
1.5 tablespoon

lyophilized blueberry powder – if you don’t have them, you can use mashed berries. 

 

Instructions

Pour chia seeds, milk, and maple syrup into a jar and mix well. Tightly close the jar and store in the fridge overnight.

In the morning mix blueberry into the pudding, add some nut butter, and serve it with favorite berries and nuts. Enjoy!
