Pearl barley salad with fried vegetables

A great example of how a salad can be saturated is that it is high in protein and good fat, and the recipe is also made up of ingredients often found at home.

1 cup | pearl barley |
vegetables | zucchini, bell pepper, red onion |
a handful of | spinach and parsley |
1 can | beans |
fo the sauce | olive oil, lemon, maple syrup and balsamic |
a pinch of | salt, pepper, smoked paprika |
Cooking instructions

Finely chop the zucchini, paprika and onion, sprinkle a little oil and add a teaspoon of smoked paprika, salt and pepper. Put in the oven for 12-15 min 180 C.

While the vegetables are baking, prepare the sauce: 2 tablespoons of olive oil, 1 tablespoon balsamic vinegar, 1 tablespoon lemon juice, 2 teaspoons maple syrup, salt, pepper, parsley.

Mix the fried vegetables with the cooked pearl barley, dried beans and sauce. Enjoy!
