Quinoa and halumi salad with lemon sauce

This is a really simple recipe that is one of the favorites at our home. It is especially rich in fiber and protein, so it can be both a nutritious lunch and dinner option.

1 cup quinoa
3 cups vegetable broth
1 onion
Vegetables bell peppers and zucchini
3 tbsp soy sauce
a couple pieces halumi
Sauce half a lemon juice and its zest, parsley, a tablespoon of olive oil, salt and pepper

Cooking instructions


Cut the peppers and zucchini into larger cubes and put them in the oven to cook for about 20 minutes at 180 C.


Fry the onion on the pan, then place them and the quinoa in a pot and pour in the hot broth. When the quinoa is fully cooked (about 25 minutes), add the baked vegetables, stir and place in a bowl. Top it with a few minutes of fried halumi cheese and sauce. Enjoy!
