Roasted vegetables with avocado pesto

One of the tastiest and most nutritious salads I have made. Lots of vegetables provide fiber, beans provide protein and satiety, and avocados are a source of good fats and energy.

vegetables:  cauliflower, zucchini, young potatoes
a can butter beans
2 slices  garlic
2 avocados
half a lemon juice
a handful parmesan
a handful fresh basil
sprinkle chili flakes
Cooking instruction


Sprinkle coarsely chopped vegetables with olive oil, salt and pepper and put in the oven for 25 minutes at 180 C. Add the unpeeled garlic for 10 minutes.


We add fried garlic, avocado, lemon juice, parmesan, basil, salt, pepper and 2 tablespoons of olive oil to the food processor.


Mix roasted vegetables with beans and pesto. If you want a little spiciness, you can add chili flakes. Enjoy!
