Salad bowl with salmon
A simple but very nutritious bowl, suitable for both lunch and dinner. Easy recipe and you can prepare it under 20 minutes.
|1 piece||of leftover salmon|
|vegetables||favorite vegetables such as bell peppers, tomatoes|
|1 cup||wild and brown rice|
|2 tbsp||olive oil|
|1 tbsp||rice or apple vinegar|
|1 tsp||mustard and honey|
|a pinch of||salt and pepper|
Finely chop the zucchini, paprika and onion, sprinkle a little oil and add a teaspoon of smoked paprika, salt and pepper. Put in the oven for 12-15 min 180 C.
While the vegetables are baking, prepare the sauce: 2 tablespoons of olive oil, 1 tablespoon balsamic vinegar, 1 tablespoon lemon juice, 2 teaspoons maple syrup, salt, pepper, parsley.
Mix the fried vegetables with the cooked pearl barley, dried beans and sauce. Enjoy!
